Dwight Cooper is a defensive fighter. With defensive fighters they're biggest flaw is handling combos. What I do is I start with a jab to the body - causing him to lower his guard then go back upstairs with a 3 hook combo. Rinse and repeat the process and he should get cut easily, and soon he should go down.
The fastest I've done this was in 3 or 4 rounds...
