I Got this achievement during the second encounter with a champion at the monk temple on the first map. I freed my vikings then sent them to there doom. whilst they were dying I killed the archers. After that retreated back uo the steps used my throwng axes to pick off a couple of enemies. But the best bit was the champion tried to case me up the stairs and then just stopped at the bottom even as I approached him he did nothing. I dont know if this is a common glitch but it really helps to net this achievement.
Also I can confirm that if one of the champions men hits you this DOESN'T ruin you achievement.

Use many times LT+Y to block an attack. It will be easy to get this achiv.

The easiest way yo get this without needing to do anything but mash A and do the final kill is to wait until the second island and then during one of the two assaults try to find a champion near some stairs and let your warriors surround it. The champion should only try to attack one of your warriors, leaving you to stand behind it and hack away until the B icon shows up.

I got it on Hard during an assault because they don't attack you if they are on stairs and there are some of your warriors around.
