Beat hard mode, three achievements left. Can I do them on easy?

I beat the game on hard mode, but I still have 2000 kills, Kunoichi Suicide Queens and Off Suit Samurai achievements left. I'd rather do those on easy mode, so what I'm curious of is if anyone knows if starting a new game will erase my skills and stats from both playthroughs? (easy then hard)

When you start a new game, you will be asked two questions. The second will be if you want to carry over your stats and skills. Say yes and all is good...but I expect you have already done so
