Pretty embarrassing to admit but I must be having a issue with the healing system. Unless you can only get hit once then I'm definitely missing something. Me and her have a lot of health to use but I die in one hit 90% of the time. Not new to the game or series at all lol just trying to finish off 5 after playing 4.. Appreciate any help!

It's one hit kill on Pro mode, best advice to give is make sure you have the infinite rocket launcher unlocked (beat the game on any difficulty in under 4 'n' half hours), that's pretty much one shot kill even on bosses, the worse part of pro mode has to be where you fight both Jill and Wesker but as I said, if you have the infinite rockets, then you should do ok.
