I joined a random xbl game, did a job, that cooking cakes stuff earn more than 1.000, almost like 2.000 but did not get the achievement.. Why is that?

Because achievement isn't about physical money you can earn by doing any job but 'virtual' currency game gives you for playing with someone. You can check how much you got only ocasionally when you see achievement progress message (regarding this achievement) durring game. It's not visible in statistics.
Anyway you and second player can just let game run but if you will be actively doing quest it will take less time, whole thing should take 1-3 hours.

According to TA guide you get 10 gold for every 5 min of the first 2 hours and after that you start getting 100 gold every 5 mins.
