When it comes to fighting unarmed, don't knock them against a wall of some kind. For some reason when you kick them into a tree or side of the carriage it counts as a kill. At least it did for me when I was going for this.
I found an abandoned wagon after I got my achievement and was able to loot it. It counted as a convoy loot too.
