I used the D-pad for most quarter, half, and circle turns. Not sure why, but I find using the stick to be too slow compared to sliding my finger around on the D-pad. Seemed more accurate too. Other than that Ryu's training is probably the 2nd most annoying out of all of them so just keep taking swings at it and you'll get it eventually.
