pretty sure you just have to open a save file that hasnt had the difficulty changed. when you start a new game, it rewrites your auto-saves, but your manual saves should still be set to hard.
when you load a save, go to settings and make sure it's still set to Hard and play on. just make sure your save isnt written over by him.
