I found the Unicorn in Mexico, east end of the map. Go to the large field that is indicated on the game map with three horse icons. It will randomly appear in this location. If you get there and don't find it immediately, then head north across the bridge over the waterfall and just turn around and go back to the location. Keep doing this till it shows up. This worked for me.
