Ok, so I beat the Frieza Saga on Normal Difficulty, and no Achievement, I made sure I beat each chapter and happened to skip Gohan fight your Dad. So is it possible I have to restart because I skipped that one, or What? I fought Frieza twice at the end.

This is because after you beat the Cell Saga, you unlock more battles in the Freiza Saga. Same for the Cell saga. In the Freiza Saga you unlock Bardock battles, and in Cell Saga you unlock Broly battles.

This is covered in the achievement guide and many other threads. You won't be able to to gain the achievement for the Freiza or Cell saga until you beat the What-If storylines unlock after you finish the main story. After the main story is done a new chapter will be avaliable in the Freiza saga for Bardock and the Cell saga for Broly. Once you beat the Bardock storyline the Freiza saga achievement will and unlock and the Cell saga one will unlock once you beat the Broly storyline. You achievements are fine. :D
