If I die on the last boss, and turn off the 360, will I have to play the whole level over again or will it start at the last boss fight?

It will start at your last save point, at the start of the second egypt level.

If you die during the last boss fight, turning off your box before the load screen pops up is unneccesary. Simply press start, quit and then continue at the main screen.
Also, it takes you to the entrance of the Nepal Temple, when you start chasing him. 5 minutes of fighting and there you have it.

I tried that, but it didn't work for me.
However, what did work was the following:
Play through the game on your 2nd time going through without dying to the last level (the one where you get to fight Sammy Jackson & trenchoat man)
Make sure your game is saved and then quit the game
Stick in a memory unit and COPY your save to the memory unit
Remove memory unit (you should now have the same savegame on the hard drive and the memory unit)
Play the final level loading from the hard drive. If you die then quit to the dashboard, delete your save from the hard drive, and then copy the "backup" from your memory unit to the hard drive and go to step 4.Keep repeating as needed. So like he said, turning the box completely off is excessive and unnecessary.

Yea the quit then continue method didn't work for me either(I was only able to get the speed demon ach that way). All that quitting, reloading,saving stuff seems like quite a bit of extra work too. All I did was pause as I died, exit to dashboard then continue.
Granted you have to start that whole level over, it takes probably 5 minutes to get to Jackson(I always kept dying on the 4th/final part of the fight). The last boss was a lot easier and I never died once I got to him. I think it took a whole 3 times doing it that way and now I'm finished.

Interesting one, this one. During the final level, I got to the temple easily without dying but then got stuck in the dark behind a wall - needless to say that I was a little pissed off. Anyway, hit quit then continued from entrance to temple just to get more practice against the final boss. Beat him pretty easily compared to my first playthrough and was gobsmacked when I got the 'Don't die' achievement. Perhaps its a case of if you look like you're gonna die, quit BEFORE u die, then restart from the temple. This is MUCH faster tha playing the whole final level again or screwing around with save files.

For people having trouble with the "not dying" achievement: you could also consider going through the game a couple of times.
The game gets easier the more experience points you have.
I took the effort and ran through it couple of times and on my fourth run with approx. 70k exp. points the final boss was a peace of cake.
Regarding that a speed run through the game takes less than 45mins it might be an alternative to this messing with savegames strategy where you have to replay the whole last level if you fail to stay alive.
