You have free reign over the place, so you can go back into the Animus and replay memory blocks for flags/templars you have missed. Other than that nothing really happens, you cant get the conversationalist or anything by replaying it, but everything else you can get I believe.

Basically get all the achievements you haven't got, rumble about and kill to your heart's desire.
