ok, i've got the training achievements,

but theres achievements like 'get 100 kills with the sniper rifle' or 'get 100 kills with the pistol'

can you do these offline?

This is answered in the FAQ. The answer is no. Aside from the six training missions, the entire list of achievements is for playing the game, which is all online.
