Hi,
once you beat more of the main quest missions, more side missions will be unlocked. Therefore you'll play a total of 5 (maybe 6) Texas Hold'em games.

BTW the description on this site is wrong for this achievement... It should say "Win the Texas Holdem Tournament side mission." The description on this site has the one for Magruder's Mine.
