If the monster does not have a check mark next to it does that mean that you don't have him yet or just not as a crystal?

Check mark means complete bestiary info entry such as resists and drops. The icon on the right depicts whether you have it caught or not (face or crystal).

that's what I thought, but for the fragment do you need the full info on the monster or just having him unchecked is fine?

Just unchecked is fine, you just need to have killed them at least once.
