Like AOS said there are a few threads about capture cards in this Tech Forum. As for what the setup looks like it would be something like this:

Xbox 360 --------TV
Video Capture device
Computer

The Xbox video and audio output can be split using common RCA jack splitters found at a local Radioshack type store. Split each RCA lead coming from the Xbox's A/V cable then run RCA cables from the splitters to the TV and video capture device. The video capture device will then connect to your computer via USB 2.0, Firewire, or PCI (if hardware is installed to the PC). There will be software included with the video capture device allowing you to record whatever is plugged into the device.

There are some devices that have inputs & outputs built in allowing for direct in and out usage as such:

___________________________Computer
Xbox -> video capture device<

If you don't want to pay $90+ for a capture card, then a USB capture device is the way to go.
