Does anyone know anything about capcom collectors editions for the US I really don't want to have to buy a Japanese PS Collection just to get the original games again.....

The games aren't getting a physical release at all outside of Japan, let alone a collector's edition.

The original games in the Japanese collection are on region locked discs, so you won't be able to play them unless you have a Japanese Playstation console (any generation).
