Juno has an awesome soundtrack if you're in the right demographic, though it's not one everyone will like. SUPER's is brilliant. I also really liked the soundtracks for Inception, The Assassination of Jesse James, The Big Lebowski, Observe and Report, The Breakfast Club and School of Rock.

American Pie movies (love all the rock/punk songs)
Classic stuff I watched as a kid such as the Sound of Music/Mary Poppins and many of the Disney films,

Gladiator, LOTR, Star Wars, Star Trek, Bladerunner, Contact, Cast Away, Indiana Jones, Interview with the Vampire, Braveheart, Alien(s), Hans Zimmer Batman OST's, Da Vinci Code, A Beautiful Mind, Shawshank Redemption, Road to Perdition, The Untouchables, Dollars trilogy, Mission to Mars, Bronson OST, Dances with Wolves, Out of Africa, Lawrence of Arabia, Dune (198x version), Usual Suspects and many others I could mention.

A great soundtrack really adds atmosphere to a movie.

Love Zimmer, Izhak Pearlman, and Williams of course.

But personal favorite soundtrack that I could listen to for months is the one for Never Back Down. Great mix of music, plus it is almost exclusively stuff I listen too

Too many to list but I'll name a few:
Basically anything by Hans Zimmer - Da Vinci Code, Angles and Demons, PotC 2 and 3 (Haven't heard the On Stranger Tides OST yet), The Pacific, Sherlock Holmes, Gladiator. Seriously just so many amazing soundtracks.
Philip Glass - No Reservations, The Illusionist, The Hours, Candyman (one of my all time faves)
Clint Mansell - Requiem for a Dream, Black Swan
James Horner - Apocalypto, The Perfect Storm, Titanic, Ransom, Apollo 13, Braveheart
John Williams - Munich, The Terminal, Saving Private Ryan, Star Wars, Jurassic Park, Home Alone, Indiana Jones, Superman
Charlie Clouser - All the Saw soundtracks

I love original scores, what I don't like are "soundtracks" that are just compilations of songs that are never actually in the movie, and very often don't have anything to do with the movie.

I don't often enjoy listening to soundtracks that are purely music, but the Friday Night Lights soundtrack by Explosions in the Sky and Requiem for a Dream by Clint Mansell (performed by some quartet I can't recall the name of) are both ones I have on my Zune.

Other than that:

Teddy Geiger - The Rocker (a surprisingly underrated movie as well)

Requiem for a Dream by Clint Mansell (performed by some quartet I can't recall the name of)

The Kronos Quartet, they worked with Mansell on The Fountain as well (along with Mogwai).

Anyway...

I'll add what I'm not sure why I didn't add in the first place: pretty much every Disney movie ever made. Regardless of the quality of the movie, the soundtrack is almost always great.
