Heres a super quick way to get the Environment Master Cheeve
Goto Multiplayer from the main screen, choose Private Match, Select the Level you need for the skillshot and hit start Match. Here is a list of skillshots and each level, and yes you can do this by yourself.
Power Plant Level
Ground Chuck - Fling an enemy into the Grinder on the Power Plant level.
Now this one is pretty simple you'll see the grinder as soon as you start and if not its right in the middle of the map.
Turbine Level
Blood Bath - Toss an enemy into the Juicer on the Turbine level.
The Juicer is a Fan spinning near the ceiling in part of the level not too hard.
Grand Central Level
Midnight Express - Kill an enemy by flinging them in the monorail's path on the Grand Central level.
This one can be difficult at the back part of the level is a train that goes back and forth, just kick/leash them that way, hopefully your timing is right if not keep right
Make A Wish - Electrocute an enemy to death in the fountain on the Grand Central level.
Fountain is in the middle of lower part of the level
Meatspin - Propel an enemy into the revolving door on the Grand Central level.
Corner of the lower part of the level
Flattery - Flatten an enemy with the elevators in the Grand Central level.
This one there are 4 spots to do it, you'll see these gaint piston things you can leash over these indents in the wall of the level, what you have to do is kick an enemy over under them then leash it down.
Junkyard
Man Crush - Crush an enemy with the Smasher on the Junkyard level.
Bottom of level pretty simple.
Fish Chow - Send an enemy into the waterfall on the Junkyard level.
I had some issues with this one, I ended up having to be on the walkway near the top of the water fall
Dead Rock
Not in Kansas - Fling an enemy into the tornado on the Dead Rock level.
Its in the center of the level
Nom Nom Nom - Feed an enemy to the dinosaur skull on the Dead Rock level.
On the back wall facing the tornado.
Waterworks
Blood Fountain - Push an enemy into the river on the Waterworks level.
It flows through the platforms pretty simple.
Royal Flush - Flush an enemy down the water tubes on the Waterworks level
Theres one on each of the platforms just kick an enemy into it and that cheevo should be yours
