I'd say Pro.. As you have Rookie which'll be Easy then SuperStar which is one up on Pro so guessing thats Hard etc..

the only thing is that the achievement will take a decent ammount of time without sims. and I hope created players are allowed

In be a gm mode there is game difficulty and gm difficulty, gm difficulty is easy, medium, hard. guess what difficulty you have to choose? ;)

Also, it can be on rookie Game difficulty

Yup.
I was lost for a second as well yesterday, then I just put the settings however I wanted, and on the screen where you pick the team I set the difficulty as "medium". I think it was set on that by default, but still.
