how do you change your offense type?

it's probably simple but I can't figure it out

When your choosing your teams press "A" and go to offensive types before you press advance

The list contains all of the team named offensive styles as well. So just scroll through the list either towards the A's or the W's - whatever is closer and you will find all the offensive styles that are achievement related.
