Faq: can I beat a level on hard and unlock the achievement for normal?/

Answer: No you must beat each difficulty individually.

FAQ: Do I need to collect the secret eggs on both difficulties??

Answer: As long as you play each level once and get the egg once from each of your 2 imes playing each level, then you will be fine

Just to add to the egg question, you don't have to get it on either normal or hard, because I got the last one where you have to fight the main boss on the dragon the whole time on easy, that way you can find the egg and then still beat the boss, because on normal while I was looking for the eye, I lost 1/2 of my life while flying around.
