On easy all I did was XXXYYYXXX (whatever combo you desire).... followed by perfect slices whenever I was able to. Keep following up your perfect slices with more of the same until you're all out. Rinse and repeat. I didn't ever parry. I blocked a few times, but it was mainly just straight combos. I didn't have trouble with him at all with just button mashing the whole time.
