Then if I do a new game after finishing , will I have the same level ? and all of my old weapons/armour ?

Same level yes, weapons/armour no! But...If you finished your first game with 100% items and thus the gold weapons rooms, then the gold weapons room is accessible right from the start! So you can pick up that awsome gun you have at the end (one shot kills), that makes insane a little easier ;)!
