Encore mode not unlocking?

I completed the game (including the mysterious unison) recently, and when I load the save and start over, it doesn't seem to be the encore mode.. According to the FAQs I've read there's supposed to a cat with which you can play music scores in the first village (when you are Polka), and a guy in the church when you first take control of Allegretto as well.

Neither of these are to be found.. Am I screwed?

There's no problem at all Mr Foxhound.
That cat is only available during chapter 6 or 7.
Its location is difficult to find, but I'll try to explain.
When you're in front of Polka's house, don't enter and turn all the way to the left. There's a dirty path that leads to that cat.

I see, thanks for the help! I was really getting worried there, and the thought of having to complete the game three times was really putting me off! :)
